My name is Kirstin Safakas and my husband’s name is Andreas. I have a cat named Luna who shares our fridge, too!

What motivated you to become an Owner of Chicago Market?

I had heard about Chicago Market but wasn’t aware that it was owned and operated by its residents until recently. I’ve been a Northsider since I moved to the city in 2006, and have always found little ways to get involved. I am proud to be a part of this!

What type of work do you do?

I work as a Community Involvement Coordinator with the U.S. Environmental Protection Agency. Essentially, I am a liaison between residents and the Federal government, and I help educate the public about the environmental work going on in their community.

What else is really important to you…and why?

I am happiest and the most “myself” when I am helping others. I really enjoy volunteering and most recently have been working with a refugee settlement group in Rogers Park.

Is there something new you’d like to learn or pursue…either now or someday?

This year, I’ve embarked on learning how to paint and training for my first marathon. Adulthood is a riot! 😉

Do you have a favorite food or “signature dish”?

I love cooking, but more importantly I love eating. I’m embarrassed to admit that my favorite food hasn’t changed since I was 12… it was and still is pizza. Specifically, Pequod’s in Lincoln Park.

What’s your "one wish come true” for Chicago Market? It might be a product for our shelves, a program you’d like to see us offer, a location – you name it!

I would love to have a bakery full of products that fits diets such as gluten-free, paleo, dairy-free, keto, etc. That stuff is hard to find!

What three words best describe you?

Quirky. Genuine. Always tired. (That’s 4 words).
