Laura Bruzas is the founder of Healthy Dining Chicago, a grass-roots community education/outreach effort and author of 100 Simple Ways to East Well for Less. Bruzas, a proud owner of three local food co-ops (Chicago Market, Sugar Beet, and Prairie Food), delivers corporate Lunch-n-Learn offerings and public library programs on a variety of eco-friendly money smart topics.
