Katherine Duncan of Katherine Anne Confections joined us and our community for a Zoom workshop on creating chocolate truffles using fair-trade cacao chocolate and local cream. We measured, melted, mixed, chilled, and rolled!
We had a great time and learned a ton from Katherine, but if you missed it, you can watch the video below. And if you'd like to follow along live with the video, you can pick up a truffle making kit in advance from Katherine Anne Confections or provide your own chocolate (1 lb), cream (1 cup/8oz), salt, and either cocoa powder or powdered sugar. Tools you'll need: silicone spatula, microwave-safe bowl, double-boiler (optional), cookie scoop, whisk, spoon.
