What motivated you to become an Owner of Chicago Market?
Chicago Market is right in our neighborhood, and we’ve been wanting to join/support a coop. (Lucky for Chicago Market!)
What type of work do you do?
We're freelance musicians and music teachers. Brian is a secondary school music teacher and private voice and piano instructor, and I teach piano and voice and am an accompanist and vocal coach.
What else is really important to you…and why?
Sustainability and caring for the earth. We only have one planet, let’s take care of it! Also, F.L.O.S.S. principles are very important to us when it comes to food. (Reader FYI: F.L.O.S.S. stands for Fresh. Local. Organic. Seasonal. Sustainable.)
Is there something new you’d like to learn or pursue…either now or someday?
Permaculture/urban farming.
Do you have a favorite food or “signature dish”?
We love to make veggie sushi with whatever produce is lying around!
What’s your ‘one wish come true” for Chicago Market? It might be a product for our shelves, a program you’d like to see us offer, a location – you name it!
A thorough bulk section that allows us to use our own containers AND includes bulk pasta (no other place in Chicago offers bulk pasta without all the packaging!)
