We would like to promote local organic agriculture and Chicago urban farming. Recently we bought grass fed beef at a local deli. Amish farmer from Indiana, I thought. No. It was imported from Uruguay. We can create a much healthier and more sustainable food system to serve Chicago, and we will. Not because we will all become wiser or inspired, but because, before many more years pass, we will not have any other choice.
