Build It And They Will Come.

Chicago is long overdue for a food cooperative that will bring together local farmers/producers and the everyday consumer. It's not enough that Chicagoans who are looking for fresh, organic and local meats, fruits and vegetable can venture out to a once or twice weekly neighborhood farmer's market for select items or patronize a farm-to-table restaurant. Chicagoans deserve robust and daily access to the full range of fresh and local food that those in our own backyard have to offer. Chicago Market will provide the opportunity for a larger number of local farmers/producers to be able to make available more of their product to a larger group of consumers on a more consistent basis. That is a win-win for everyone.

Chicago has been home for over 20 years. I am co-owner and co-founder of Root Collective, which owns and operates Cantina 1910, a farm-to-table modern Mexican restaurant, and The SoFo Tap, both located in Andersonville, and Crew Bar + Grill in Uptown.
