It's green tomato time! Time for all those not-yet-ripe tomatoes to come off the vines and indoors before they wither in the frost. When faced with a large quantity of unripe green tomatoes, pickled green tomatoes is a delicious alternative to Fried Green Tomatoes - one that you can enjoy all winter long!
This hands-on class is designed for the novice canner as well as the seasoned pickler in need of a refresher. We will go over the basics of pickling science and boiling-water-bath canning, including information on food safety, and recommendations on how to store your newly canned goods. Each participant gets to take home a jar of Curried Green Tomato pickles that they've made during the class.

Liat is a master canner and preserver, a passionate supporter of sustainable urban and rural food production, an artist and educator, and an avid gardener living in Chicago. Liat is passionate about finding new ways to preserve her garden bounty, and is equally passionate about teaching others the joyful art of preserving in classes she offers in hers and other people's kitchens.
